Cool Off This Weekend

Here is fun and delicious idea from Clean Eating to dress up your ice cream or frozen yogurt over this holiday weekend…I actually have used this recipe on my protein pancakes and I love it. 


  • 3/4 cup fresh blueberries
  • 2 tbsp raw honey
  • 1 tbsp fresh lemon juice
  • 2 tsp arrowroot powder


  1. In a small saucepan, bring blueberries, honey, lemon juice and 1 tbsp water to a boil on high heat. Reduce heat to medium-low and simmer for 2 to 3 minutes.
  2. Meanwhile, in a small dish, combine arrowroot powder with 1 tbsp water to form a slurry (a thickening agent). Whisk or stir arrowroot mixture into blueberry mixture until incorporated. Simmer for 1 minute or until just thickened, carefully mashing blueberries with a fork to extract juice. Remove from heat and let cool completely before pouring over your favorite clean ice cream.

Nutrients per 1-tbsp serving: Calories: 27, Total Fat: 0 g, Sat. Fat: 0 g, Carbs: 7 g, Fiber: 0.5 g, Sugars: 5 g, Protein: 0.25 g, Sodium: 0.5 mg, Cholesterol: 0 mg

If your belly is not a fan of the ice cream option. Go with coconut milk ice cream! My stomach does not agree at all with ice cream, So when I do splurge this is my favourite option.

You can also buy this at your local Choices, Natures Fair and Whole Foods.


Coconut Milk Ice Cream-

For a chunky version of this refreshing ice cream, stir a cup of chopped peaches or strawberries into the coconut mixture before transferring it to the ice cream machine for freezing.


4 egg yolks 
1/2 cup sugar 
1 (13.5- ounce) can light coconut milk 
1 (13.5- ounce) can regular coconut milk 
2 teaspoons vanilla extract


In a large bowl, whisk yolks and sugar together until pale yellow, 1 to 2 minutes. Add light and regular coconut milk and whisk again until well combined. 

Transfer coconut mixture to a medium pot and cook over medium heat, stirring constantly, until just thickened and mixture coats the back of a spoon, 8 to 10 minutes. Be sure not to let the mixture boil. Remove pot from the heat and stir in vanilla. 

Transfer contents of pot to a bowl and chill until cold. Process mixture in an ice cream maker according to manufacturer’s instructions then transfer to a container with a lid and freeze until firm, about 2 hours more.


Per serving (about 4oz/118g-wt.): 200 calories (130 from fat), 14g total fat, 11g saturated fat, 100mg cholesterol, 20mg sodium, 16g total carbohydrate (0g dietary fiber, 14g sugar), 1g protein

So today was going to be a recipe post, but then I got an e-mail from Clayton Arnall saying that my photos were ready for viewing.  Once I saw them I couldn’t wait to share them with you! When Clayton explained to me what kind of look he was going for in this shoot, I dug out some of my favourite hippie pieces and got in touch with my inner flower child.  I have always wanted to shoot with Clayton not only because he has an amazing eye for photography, but also because he is always trying to think outside the box and come up with shots that make you stop and stare. He recently did a video of Alana Denhams “Ilovedenham” wedding…Breathtaking!

Tonight I got to get away for a night out with the girls. There truly is nothing better then spending a couple hours laughing with your friends after a long day. Thank you Kate and Kelsey for all your mommy wisdom and laughs.Love you both~~*

The 44 day change

So as I promised, I’m updating you guys on my clean eating progress.

I thought I would make a little video to show you how unbelievable clean eating and training with Carly Mitchell/Vo2max has been. Over the past 44 days I have definitely seen and felt the change, but to be totally honest, I did not fully grasp how big the transformation was until I put this video together.

Chest 32″           30.5″

Ribs 27.5″           26.75″

Waist 27″            24.75″

Stomach 31.5″     27.25″

Bi 10″                 9.25″

Hips 37.5″           34.5″

Thigh 24″             21.75″

Calf 14.25″          13.5″

Total Inches lost 19.25

A loss of 5% Body Fat I’ve gone from 24% to 19%

I Gained 1 pound of muscle which is amazing due to the fact that I’ve lost 12pounds.

I truly hope this video and results inspire you.

Oh and a side note, The pull ups that I’m doing are practice full body pull ups! In case you are wondering why I’m adding a little jump. My goal is 10 full body pull ups ,so till then it’s practice practice:)

The new salad bowl

What a crazy week this has been, McCarthy and I started our week off in Vancouver thrifting it up with Troy’s Auntie Maxine and Grandma Gail “DIY POST IS COMING” and Troy has been on a business trip all week so this left me holding the role as single mother again. This is not an easy job by any means and I applaud you single moms out there! I do apologies for the lack of blog post though and I promise you there are some gooders coming.

While in Vancouver Auntie Maxine showed me this little trick for making your dinner or dessert a little more exciting. Tonight I tried it on one of my favourite meals “Spicy Thai Salad”. I hope you enjoy this recipe as much as we did.

I would have taken better and more photos of this yummy dinner but I literally was throwing it together before I ran out the door to teach!! Just another relaxing night right?!!


Spicy Thai Salad bowl-

1-tsp coconut oil 

Your pick of any veggies (I used peppers,spinach and scallions)

1-Free range chicken breast

1-Tortilla (you can use whatever type you prefer)

Spicy Thai Rub or seasoning you prefer (Get creative)

Tortilla Prep-

Pre-heat oven to 400

Place Tortilla in shell and bake at 400 till slightly crispy

Remove from over and let cool on wirer rack

Salad Prep-

Rub your thai seasoning on chicken breast and cook on medium heat 

Once chicken is throughly cooked add veggies of your choice

Saute till veggies are just slightly cripsy

Add veggies to your tortilla bowl top with a low fat cheese and enjoy!


There will be dancing..

If you ask my husband , what is Rachel’s favourite thing to do?

He will without a doubt tell you dancing! One of my favourite things about summer is the fact that there is so many weddings , with weddings brings dancing And in my case lots of it.

When selecting my dress for my friend Kelsey’s wedding “one of the best dancing weddings I have ever been at” I knew going into it I needed the perfect dancing dress and this dress from Blonde is just that. Paired up with lovely accessories from one of my local favourites “Frock” ,  This look served me well:) I was dancing till 1:30am and loved every minute of it!

Special thanks to Grandma and Grandpa Doell for tucking McCarthy in so we could dance the night away, Bloom Hair , for always making me look great and to Shelly Banman for allowing me to be one of her beautiful subjects. Shelly you made this shoot so much fun and I can only hope I get this opportunity again.

Oranj Fitness Presents Okanagan’s Largest Outdoor Yoga Class 

Come find your groove and get ready to move!

Kelowna, BC June 29, 2011.  Oranj fitness is hosting Okanagan’s Largest Outdoor Yoga Class.  A live DJ playing all the best tunes will be center stage setting the tone to this fabulous outdoor yoga class.  Sheila Chutskoff, Susie Newson and Laura Martini, three exclusive instructors to oranj fitness, will be teaming up and teaching this 90 minute class right downtown at Stuart Park.  Groove Method warm up will be taught by Tamara Logan!  All proceeds will be donated to Downtown Kelowna Food Bank.

Community minded health and fitness studio oranj fitness wants to bring the local yoga and fitness community together by hosting Okanagan’s Largest Yoga Class.  DJ John Byrne will be busting out with a mixture of music on stage to set the mood for the 90 minute class.  Childcare will be provided for an additional donation and will include face painting and balloon animals.

“I am so happy to see such an overwhelming response to this event…” says Sheila Chutskoff, owner of oranj fitness.  “lululemon athletica really came on board from day one to help sponsor and promote this event.  We hosted an event like this two years ago and it was amazing!  It happened right during the forest fires so we did our sun salutations in honor of the West Side and sent all of our positive vibes their way.  I’m really excited to once again bring together the yoga/health & fitness community.  I can picture it now, hundreds and hundreds of health enthusiasts, beginners, intermediate and advanced all joining together as one.  Seeing hundreds of people on their mats all flowing out to the beat of the live music played by our live DJ is going to be a wicked site.  It’s honestly going to be the most amazing yoga class the Okanagan has ever seen!”

The Okanagan’s Largest Outdoor Yoga Class will take place Sunday July 17th 2011 downtown in Stuart Park at 1414 Water Street.  Class runs from 9am – 11am and doors open at 8:30am.  To participate in this class we ask that you donate a minimum of $5 cash or bring $5 worth of non perishable items for the Kelowna Food Bank.

Today I got to sit down with one of my favourite yoga instructors “Laura Martini” of Martini yoga and give you guys a little insight to what yoga is all about, what to expect and who Laura is.

I have been going to Laura’s yoga classes for a couple years now and I can honestly say I’m challenged every class and I leave feeling so refreshed. I truly admire Laura not only for the integrity she brings into her class room, but also her drive to be an entrepreneur in her field , her openness and respect for other instructors.

I hope this video helps to answer some of your yoga questions and inspires you to get your mat out and try something new.

One of the things they always tell you in yoga is there is no judgment and to remember this is not a competition to see who the best yogi in the room is. And at the end of class to just allow yourself to be and realize that you have just achieved something great today.

I’m remembering these words as I upload this video….

My learnings…

1)Don’t shoot in the yoga room …All though you may think it’s going to look great remember the mirrors show what happens behind the camera.

2)Post yoga hair is not becoming on a lady…Laura your hair looks great:)

3)Remember to laugh because your learning and you have come so far already!


Sweat Once a day


So today was a rather busy Monday, hence the 10:15pm blog post.

My day started off with taking product notification photos for lululemon athletica here in Kelowna. If your not on their product notification, I highly recommend you head here and sign up. It’s such a great way of staying in touch with your local store and being the first to know when that tank top that you wanted so bad but missed out on is finely back in the store!

I loved playing dress up with the lulu girls and testing the fit and function of each piece. I can honestly say I think this is my favourite line plan from lululemon so far. They are using fabrics in such innovative ways to not only make you look great but also be the most functional workout clothing you will invest in. For a busy day like today it’s so important to fuel properly. These last couple weeks I’ve been struggling with finding the time to prep food and actually eat enough food to get me through the day.

Making sure you always have an apple and some almonds in your bag is a great way to stay on top of your game and make sure you don’t reach for the snickers! Clean eating protein bars are also a simple and effective way to make sure you are getting all the nutrition you need at snack time.
