Lemon Parmesan Brussel Sprouts



Here is one of the most delicious and healthy ways to add zest to your dinner plate and it will only take you 15 min!


For these delishious treats you will need-

1 pound of brussel sprouts 

half a lemon (or more if you love lemon)

1/4 cup of low fat fresh parmesan cheese

2 tbsp of coconut oil

pepper to desirable taste


Preheat oven to 475

Place on cookie sheet covered in parchment paper and place in oven for 15 minutes.

Serve with your favourite protein and enjoy~~*

Completed my Ambassador shoot last Tuesday!

On June 3rd, my friend Jessica, Laura and I planned an outdoor charity yoga class to bennefit Jessica’s Ride for the Cure team.  Before the event started our wonderful yoga instructor Laura Martini brought me on stage to sing Happy Birthday (not a fan of the whole birthday singing thing, but I was a good sport). As I looked out over the crowd, i couldn’t help but be amazed how many people came out to support this great cause. Then something totally unexpected happened…My wonderful lululemon friends stood up out of the crowd with a poster that read “Rachel…Will you be our Ambassador?!” This was the last thing I thought would happen as Jessica and I were laying our mats down in the park that night, hoping people would come regardless of the cold, rainy weather we were having.

My friend Dana said something in class the other day that really stuck with me. When we try to force something to happen, we push whatever it is farther and farther away, until we come to peace and just settle with what will be is going to be. Becoming an Ambassador has been a dream and goal of mine for 4 years and I honestly was beginning to think it would never happen. In my mind I had crossed all my T’s dotted all my I’s and was starting to feel like I was treading water and not getting any where with this proposal. What this experience has taught me is to be true to my heart, and never to compromise the goals I’ve started just to get the ball rolling a bit quicker. I believe this proposal came at the perfect time. I was done trying to force it to happen, and felt at peace about the situation. Many people have asked me if this proposal was bitter sweet due to the fact that I am pregnant and not at the top of my game? Regardless of being pregnant or not, I feel so honored that i was asked to hold this role. My community and followers have seen who I am not pregnant, it’s time for you to see who I am pregnant! The world of fitness needs more woman who will stand up no matter what obstacle they come up against ( mine being pregnant), and choose to be a healthy source of information, motivativation and inspiration. Pregnancy is one of the most beautiful things you could ever capture on the camera and I intend to prove that to you. Ambassador shoot is set for next Tuesday June 19th…Stay Tuned!

Thank you for being a part of my life




One of my favourite things to do on my birthday, is eat dessert (my mother in-law made this amazingness for me)  and take some time away to reflect on my year, what I’ve learned, what I’m still learning and who really impacted the major moments of it. 

I think one of the most important things I learned this year was the power of “It’s not about me”. My goal over this past year was to wake up every morning (I missed some mornings) , be open and willing to bless someone that day. I can honestly say it changed the way I think, act and react to situation and people. When we are so wrapped up in our own problems, how tough things are for us, who’s coming up short ect we lose sight of what life is really about and lose the joy that comes with it. I truly believe that I have learned one of the greatest treasures in life’s journey…It’s not about me and there is unspeakable joy in letting go of our selfish nature and putting our energy whole heartedly into the people that are brought into our lives.

With all that being said, I really want to take the time and thank some people that took the time out of their everyday lives to bless me, and because of that I will never be the same.

Words can not express my gratitude for your investment of time and energy into my health and weight loss after having McCarthy. I came to you frustrated, confused and feeling as though I was losing the battle with my Hypo-Thyroidism. You were the first person who believed in me, made me believe my goals were reachable, stood behind me not just with words but with action as well. You have walked out these past 15 months of being a new mom with me and gently held my hand without judgment or criticism along the way. You inspire me on a daily bases with your open heart, gentle nature and your willingness to serve your family with love and excitement. Thank you for helping me to always see the light at the end of the tunnel when my days seem to long, for always reminding me that laughter is the best medicine and for loving McCarthy with everything that is in you! I love you and am so blessed to have you in my life.


This blog post could continue on with countless names of people that I am so thankful for and I feel like that is such a huge blessing in itself. This has been one of the most dynamic years of my life and I am so excited for many more years of being stretched and strengthened.
