Beans for dessert




White kidney beans are considered superfoods due to their high mineral, vitamin, protein and fiber content.

So why not make a dessert out of them?! This dessert is one of my favourites and the best part is you will be left with no guilt!


-What you will need-

2 oz dark chocolate (melted)

1 1/2 cups soft-cooked  Eden Organic white kidney beans, rinsed and drained

2 eggs

1 egg white

2 tbsp coconut oil

1/4 cup unsweetened cocoa powder

1 tsp baking powder

1tsp vanilla extract

1/4 cup xylitol

1/2 cup raw organic honey


Place all ingredients in your Vitamix on medium speed.

Fully blend all ingredients

Coat 9×11 baking pan with coconut oil

Bake ay 350f for 30 minutes

Cancer-Fighting Properties

White kidney beans and other legumes are rich in antioxidants, which are known to have anticancer properties. When cells in your body metabolize, they produce compounds known as free radicals. Such compounds bind to your cells, causing aging, cancer and chronic diseases. Antioxidants destroy free radicals, countering their harmful effects.

Rich in Fiber

White kidney beans, just like other legumes, contain both soluble and insoluble dietary fiber. 1 cup serving of cooked kidney beans satisfies 45 percent of the Recommended Daily Value (DV) of dietary fiber. Once in your digestive system, soluble fiber binds itself with the bile acids and removes it out of your body. This prevents such bile acids from being reabsorbed in your liver and hence inhibits synthesis of harmful cholesterol. Insoluble fiber prevents constipation by increasing the bulk of your stool. (Ref 4) This prevents digestive complications such as irritable bowel syndrome and diverticulosis.

Heart Healthy

Rich in vitamin B9 — also called folate or folic acid — and low in fat, white kidney beans are heart-healthy. Folate reduces the levels of the amino acid homocysteine in the bloodstream. In elevated amounts, homocysteine increases your risk for heart attack and stroke. Findings published in the October 2002 issue of “Journal of the American Medical Association” indicate that if Americans consumed 100 percent of the daily value of folate, the risk factor for heart attacks would decline by 10 percent to 11 percent annually due to lower levels of homocysteine in the bloodstream. A 1-cup serving of white beans should satisfy more than 50 percent of the DV for folate.

Improved Cognitive Ability

White kidney beans are rich in vitamin B1, or thiamin, which is necessary for formation and operation of brain cells. Thiamin is a key component in the synthesis of acetylcholine, which ensures that your memory functions properly. When eaten daily, a 1-cup serving of white kidney beans can help improve and maintain your cognitive function.

Detoxifies Sulfites

Kidney beans contain molybdenum, a trace mineral that is a key constituent of an enzyme known as sulfite oxidase. This enzyme detoxifies sulfites commonly found in prepared foods such as salad bars. If you are sensitive to sulfites, you may experience headache, rapid heartbeat or disorientation. Reacting adversely to sulfites indicates that molybdenum stores in your body are insufficient to cleanse them. According to The World’s Healthiest Foods website, 1 cup of cooked white kidney beans meets 177 percent of your DV for molybdenum.

Over the past couple months I have received many e-mails asking what supplements I use and what would I recommend. Fashion Friday! First Hair Cut…




This week’s Fashion Friday is all about hair!

After 2 years and 9 months, the day finally came to chop McCarthy’s lovely long locks. This decision was not one that was easy to come to. I love that McCarthy is such a free spirit and I feel like his hair was a perfect representation of his fun attitude towards life.  But as the days went on, my free spirited, fun little boy started to look a little crazy and his fashionable flow no longer looked too fashionable. I knew we couldn’t just chop it off! This hair cut needed to display style and some edge. So where does one go for these tips?! Ummmm…Pinterest of course! After pinning a few to my ‘little boy fashion’ inspiration board, I knew it was time to take the leap! McCarthy and I had a chat over breakfast and he was more then excited for a date with Mommy to go get his hair done. I explained this was a very special day and that if he sat very still, Mommy would take him to the mall for a mini truck of his choice.  I was so proud of this little guy! He sat like a champ and had such a great time with the whole experience. It also helped that our hairdresser (Tasha) is probably one of the most gifted hairdressers with the calmest/sweetest spirit (McCarthy loves her.)

Alhough tonight was laced with a slight feeling of sadness for McCarthy turning from my baby into a little man, I cherish these Friday night dates and will hang onto his little hand as long as I can.

McCarthy, you bring so much joy and laughter into my day. You will forever have my heart!

Happy Thanksgiving from the Doells!


As you pack away your Thanksgiving leftovers, your mind is slowly starting to think about this upcoming week and your food planning. Let me help by introducing you to these delicious little pumpkin treats! Once the Holiday’s start to arrive, there is never a shortage of pumpkin flavoured snacks in my house, but I always try and keep them healthy and simple. The below pumpkin treats are must-haves for the kid’s snack bags.

 Now these were meant to be clean pumpkin donuts, but I realized I did not have a donut pan! So I used mini muffin tins and it worked perfect! McCarthy loved that they were bight-size and I’m pretty sure he ate about 12 of them already today.

Donut Ingredients:

  • 1 cup whole wheat flour (You can sub this for all purpose gluten free flour)
  • 1 egg
  • 1/4 cup unsweetened applesauce
  • 1/4 cup pumpkin puree
  • 1/3 cup nonfat plain greek yogurt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 cup unsweetened vanilla almond milk (or plain)
  • 1 teaspoon vanilla extract
  • 2 TBSP coconut sugar





  1. Whisk all ingredients together and carefully pour into doughnut pan. Don’t fill too high or you won’t have a hole in the middle of your doughnut!
  2. Bake at 350F for 20 minutes or until done.
  3. For the glaze, simply whisk all the ingredients together in a small mixing bowl and pour over the donuts after they have cooled.



Glaze Ingredients:

Lightly brush donuts with coconut oil and dust with powdered sugar.

You can also make a homemade frosting and eat them like a cupcake!



Breakfast treats and blurry smiles

These little faces completely describe the joy we felt having Daddy/Troy come home after a week away.  We have spent the weekend catching up on family time, cruising the mall,DIYing and eating tons of yummy Canadian Thanksgiving food.

Here is one of my new favourite breakfast treats for our family!



1/4 cup Oat Flour
(Make oat flour by blending regular oatmeal in blender till “flour” texture) 
1/4 cup PB2 (powdered peanut butter)
1/2 cup unsweetened Almond Milk
1 mashed banana
1 egg white 
1 tsp baking powder
1 tsp vanilla extract
I Tbsp natural peanut butter
1 Tbsp dark chocolate chips

(You may also add scoop of protein)

Mix all ingredients. Cook with coconut oil. Makes 8-10 small palm size pancakes. Top with extra chocolate chips. Enjoy








curry soup for the soul



Today was one of those days I need to hang onto as a Mother. It was calm, no breakdowns and very little coaxing to get people to eat their food today. Today’s smiles and giggles at the park helped ease the challenges of this past week.  I share this past week of my life not for sympathy but to encourage all the parents out there fighting the same battle. On Saturday night of last week, McCarthy suddenly, after 2 1/2 years of fantastic sleeps, decided he no longer wanted to sleep anymore. We tried talking, not talking, placing him back in his bed repeatedly, being nice, being firm, we got angry (I want to add we were not impressed with ourselves in this moment) hugging, rubbing his back…and the list goes on. One would think that this little man would get tired. Oh no! He can keep a strong will from 1-4am.  To make a long story short, the week was long, filled with tears, lots of prayers and a daily choice to try and stay positive.  Tuesday night we started a parenting class called “Loving your children on purpose” By Danny Silk. If you take one piece of advice away from my blog, I pray you chose to listen to me on this one! BUY THIS BOOK! This book has completely changed our viewpoint on parenting and the decisions we will make moving forward. For me to get into all of the take-aways from even the first night, I would have you reading for hours. So I’ve decided I would list just one and how it helped us this week.  “Perfect love drives out all fear.” I think a lot of times as parents in the moments of frustration we forget to step back and really look at the heart of the issue. The reality was McCarthy seemed defiant, angry and had no intention of listening to us no matter what we tried.  Somewhere along the line, with McCarthy getting older and his little brain/imagination growing, he decided he just didn’t feel safe anymore. After Tuesday night I started really listening to this little man and you could hear the desperation in his words. “I need you” It’s dark” “what’s that noise” “please cuddle me!” All week we worked on dealing with McCarthy 100% love and not in an attitude of frustration. We also worked on reestablishing the feeling of safety. So every night when he says “no don’t leave me”, we pray with him, leave his door slightly open and tell him we are right outside if he needs anything. He has gotten out of bed a couple times to check and see if we are holding to our word;) But we have made the commitment until he feels secure again to practice this. I just find tasks to do, laundry, studying, or countless pushups/crunches.  Every night these sessions have gotten shorter and I can see the end in sight! Although I would love to tell you I fixed this problem overnight…The reality is greatness comes with time and lots of work! So to all you parents out there leaning on a stair rail, feeling sick from being awake, or feeling like you might lose it…we have been there and we feel your pain! Know there are parents out there cheering for you! If you need me, call me! I will deliver Starbucks or drink wine with you on the stairs! (Oh wait, I mean do push-ups!)



P.S I love my friends and the comfort and strength you have brought to me week! Thank you for letting me cry, making me laugh, and for taking McCarthy on walks when he had enough of life! I love you all!



My friend Tasha is not only the best hairdresser, she is also one of the best cooks I know. She recently shared this soup recipe with me and it’s a gem! This deliciousness brought comfort to many afternoons this week!



Coconut Curry Soup

4 cans of coconut milk

2-4 cups of water

1-2 stalks lemon grass

1-2 TB red curry paste (depending on how spicy you want it)

2 TB chicken stock powder

Place all ingredients in a large pot or slow cooker. Bring to a bowl, allow to simmer while adding vegetables and noodles of your choice.




Fashion Friday!



One of the items in my “must haves” for my little boys fall fashion is printed leggings! They are comfortable, fashionable and oh wait…EXTREMELY EXPENSIVE???!!! When I went online and started looking up websites to order my little men’s leggings, I quickly discovered I would be paying a pretty penny. Right then and there I decided this was the perfect situation to team up with my DIY/Blogging master sister in-law.  I came with the vision and Jillian showed up armed with paint, foam and all the right tools to get the job done! Energy Bombs



 One of my favourite things to do on a Saturday morning is to visit our local Farmers Market. We love to pack the kids up, shop from our local farmers and chat with all the lovely vendors. One of my favourite vendors (and friends) is Jana Wendland.   Making the commitment to eat healthy and make smart choices is, on most days, easier said then done.
