Can Easter be Healthy?

Coconut Maple Bunnies

Ingredients

  • 1/2 c coconut oil
  • 1/4 c maple syrup
  • 1 tsp vanilla
  • 1 bag enjoy life chocolate chips (or a dark chocolate of your choice, chopped)

Steps

  • Combine the oil, syrup and vanilla in a bowl. (I like to smash the coconut with the back of the spoon to be sure it’s not lumpy.)
  • Spoon the mixture into the mold. (If you do not have a mold, you can use mini cupcake papers or just spoon teaspoon sized mounds onto a parchment paper lined cookie sheet.)
  • Freeze until firm (over an hour)
  • Using a double boiler, melt chocolate. If you don’t have a double boiler, use a large bowl placed over a pot of boiling water. This is a gentle way to heat chocolate without the risk of burning it.
  • Use two spoons to dunk the bunnies one at a time, make sure they are coated fully and then place them on a greased wire rack. The chocolate will firm up after a few minutes. I like to store these in my freezer.

*this should make about 12-15 bunnies

Chocolate Peanut Butter Bunnies:

  • 1/2 c coconut sugar
  • 1 Tbsp maple suyrup
  • 1 tsp vanilla
  • pinch of salt
  • 1 bag enjoy life chocolate chips (or a dark chocolate of your choice, chopped)

Steps:

  • Mix all ingredients into a paste

Peanut Butter Chocolate Energy Balls

Happy Food Friday everyone!

This weekend I’m heading off to Vancouver for a weekend of training, catching up with some of my favourite women, and of course hitting up my favourite studios! On busy weekends, fuelling is so important. Jillian Harris and I whipped up these amazing little energy balls a few weeks ago. These balls are packed with goodness and will blow your mind with deliciousness!

INGREDIENTS

  • 1 cup peanut butter
  • 1 cup almond butter
  • 1/2 cup honey
  • 1/4 cup chocolate chia seeds
  • 2 tsp maca powder
  • 1/2 cup dark chocolate chips
  • Roasted hemp seeds
  • (You also can add quick oats, egg, and or protein powder for some extra sass!)

DIRECTIONS

Mix all ingredients in a bowl
Roll into little balls
Roll in roasted hemp seeds
Place in freezer for 30 minutes
Enjoy!!!!!

Workout Video: The Bosu Balance Challenge

And now you officially have no excuse when you go to the hotel gym and all that’s there is a broken treadmill and a Bosu…good luck!

 

Here is the complete workout written out. Doesn’t look like much on paper, but I guarantee you are gonna feel this one after it’s all said and done 🙂

 

  1. 15 burpees
  2. 15 shaker push ups
  3. 10-15 surrenders (per side)
  4. balance Bosu squat shaker 45-60 seconds
  5. 30 butt raises
  6. 25-30 Bosu crunches
  7. 30 pelvic thrusts
  8. 30 one leg bridge (15 each side)
  9. 50 Russian twists (25 each side)
  10. Bosu back extensions (10-15 reps)

 

 

For My Birthday…

I remember the day I fell in love with Troy…like really really fell in love.

It didn’t start off as the most romantic day. It actually was an intense day filled with the drama of past insecurities that were rearing their ugly heads. But I remember him getting down on one knee and telling me what he saw in me, the heart he was in love with and who he believed I would become. In that moment, I knew that no matter what came my way and what mistakes I had made, this man would stand beside and support me forever.

When you have a man like this you want him to stick around, and he did! In exactly 62 days I will leave my 20’s behind and enter my fabulous 30’s. They will be fabulous, right? (Please tell me they’ll be fabulous)

Every year I try to do something for my birthday that reminds me that life is not about me. This normally involves a community fitness class, a fundraiser of some sort, or another creative idea to get my community a bit healthier. This year I knew Troy would be planning something exciting and fun for my 30th (because he knows it’s a big deal) so I decided to stop him in his tracks and plan it for him. This year, all I want for my birthday is for the one person that I love more than anything in the world to accomplish his goal of getting healthier this year. Troy has been trying for sometime now to get back into a fitness routine and to kick his sugar cravings. So this year I asked him (for my birthday) to get healthy for me!

For the next 61 days we are both going to be avoiding sugar and trading in date nights at our favourite restaurants for yoga classes, Crossfit, or any exciting form of movement we can come up with. Now before you all feel bad for Troy having to give up sugar, let me clarify that we are still eating health forms of sugar. We will be avoiding things like candy, cookies , cakes and other processed food items. We also are going to participate in the Vancouver Sun Run as a goal to complete together which we have never done. I’m so excited for this next 61 days, taking 30 by storm and seeing my man crush some serious goals!
