I’m Thankful For You…

I’m blessed with an amazing group of friends in my life. No matter how long the time stretches between our visits together, we pick up exactly where we left off. I feel that at this point in my life I appreciate friendship more then I ever have before. Often times I think we look at our friends as these perfect little dolls we want to play house with, dress up, or enjoy tea parties with. But the moment they become something we didn’t write into our storybook, we question their roles in our fairy tale. You realize as you get older, though, that people are human, they make mistakes, and their imperfections make them perfect in every way. I’m thankful for the women who have been brought into my life to walk out every season, forgive me when I screw up, and celebrate life’s most important moments with genuine joy.

Every fall, I love to get together with my friends and celebrate Thanksgiving in some way, shape, or form. We have done Thanksgiving dinners, fall walks, coffee dates, etc. This year I decided to throw an “I’m thankful for you” brunch at my house. I had some exciting news to share with my friends, and I wanted to put lots of detail into the morning together. To the lovely friends who were not able to make this day, you were missed.

Ginger Bread Cookies: Tasha’s Kitchen

Ginger bread cookies – refined sugar free, low carb, vegan option.

All of these ingredients can be purchased at a grocery store like Nature’s Fare.  I used all organic ingredients.

Nothing says Christmas like fresh ginger bread cookies! However, the main problem with most traditional ginger bread recipes is that they’re usually made with high amounts of sugar, butter and white flour. Here’s a recipe that I adapted myself to omit the less-than-desirable ingredients while keeping that great ginger bread taste! The end result is a great tasting ginger bread cookie, filled with healthy, organic ingredients that won’t leave you or your loved ones running on a sugar high. One thing about these cookies is the icing provides a lot of the sweetness, so make sure you don’t skip it!

ingredients 

  • 2 cups organic sprouted spelt flour
  • 1 cup almond flour
  • 1/2 cup coconut sugar (or maple syrup, honey, xylitol)
  • pinch of sea salt
  • 1/4 cup molasses
  • 1 large egg (or flax egg)
  • 2 tsp vanilla powder
  • 1/2 tsp baking soda
  • 2 TB cinnamon
  • 1TB ground ginger (you can use 1/2 TB more if you really like that ginger kick!)
  • 1/4 tsp each cloves and nutmeg (if I do’t have these 2 on hand, I use pumpkin spice mix which works well in a pinch)
  • 1/3 cup unsweetened organic applesauce

Icing:

Blend all ingredients in a high speed blender, then let icing harden up in the fridge for about an hour before using it.

  • 1/4 cup maple syrup
  • 2TB raw organic honey
  • 2T coconut butter
  • 2T coconut oil
  • 1/4 cup soaked cashews (soak for at least 4 hours)

Directions:

Mix dry ingredients in a bowl. Mix wet ingredients in a separate bowl. Stir until its a big ball of dough. Mixing with your hands works best. Place dough in a big plastic bag and refrigerate for at least 2 hours. Roll out the dough on a floured surface till it’s about 1/4 inch thick. It really depends if you want thin crunchy cookies, or a big thicker and a bit softer cookie.  Cut out with desired cookie cutters. Bake for 350 8 min.  Please check them at about 5-6 min as they may not need the full 8 min depending on how thick you made them.  Basically when they’re a bit browned on the bottom, and you start to smell the wonderful cookie smell coming from the oven, they’re done!  Cool completely before decorating them with icing. You can use a piping bag, or in a pinch like me, cut a tiny bit off the corner of a sandwich ziplock bag.

Tricep Rope Press Down: Exercise Tips

Goal of Exercise:

The Tricep rope press down is a great way to develop strength and definition in your arms. It also helps to strengthen your back muscles as you press and pull your shoulders down and back. The abs are working constantly as you stabilize the body, so make sure to keep a tight core and breathe throughout the exercise.

As the Holidays approach and sweet treats start to find their way onto your coffee tables, it’s important to have a solid library of healthy dessert options. My plan, this week, is to set you up for success! Tonight’s dessert post is simple, delicious and also makes the perfect hostess gift for any parties you are going to attend. Enjoy~~*

 

These measurements make a large batch, which I like to put away for any last-minute gifts.

  • 1 Cup coconut oil
  • 1 Cup raw cacao powder
  • 2 Tsp vanilla bean
  • 1 Tsp maca powder
  • 1/2 Cup raw honey or maple syrup
  • Sea salt to flavour
  • and Candy Canes to top

Melt your first five ingredients together in a double boiler. Once all ingredients are throughly mixed, spread mixture on parchment paper. Sprinkle with sea salt and top with as many crushed candy canes as you like. Place in freezer for 20-30 minutes to set. Serve with your favourite red wine or a delicious cup of java.

Banana bread-grain free: Tasha’s Kitchen

Banana Bread-Grain free, gluten free, sugar free.

All of these ingredients can be purchased at a grocery store like Nature’s Fare.  I used all organic produce.

I love banana bread with all my heart.  Who doesn’t?!  This recipe makes yummy moist banana bread that will satisfy even the truest banana bread lover. It is gluten free, low carb, and high in protein – which makes it a great snack option!  I almost always double this recipe to make 2 loaves so I can freeze one. Happy baking, and enjoy!

ingredients 

  • 3/4 cup almond flour (also called almond meal)
  • 1/4 cup coconut flour
  • 1tsp baking soda
  • pinch of sea salt
  • 3 TB melted coconut oil
  • 3 organic free range eggs
  • 1 cup mashed banana (which is about 2 ripe bananas)
  • 1/4 cup xylitol (you can use maple syrup or honey, or stevia, or coconut sugar if you don’t choose xylitol)

Directions:

Put all dry ingredients into a bowl and mix well.  Put all the wet ingredients including the bananas into the blender and blend until smooth.

Add wet to dry and mix until you get a thick batter like consistency.

Put in loaf pan lined with parchment paper.

Bake at 350 for about 40 minutes, or until the top looks quite brown and a toothpick, or knife  comes out clean when you test it.

This stores best in the fridge, or freeze it for longer storage. I like to eat it as is, or spread coconut butter on it while it’s still warm.

Today’s workout is all about speed, sweat and giving your body a much needed adrenaline boost.

10 Minute Warm Up

Equipment – Free Weights

Do each exercise until failure then move on to the next. If you have only completed 20 push ups, you will continue your push ups in the next round. Once you have completed the circuit with as many reps as possible for each exercise, you will either row 500 meters or run 500 meters. You will complete a 500 meter run or row after each circuit.

Example
