A bit of time has passed since my last post! Shame on me! Life just seems so busy these days with getting ready for baby and enjoying all these hot summer days we’ve been having.  

OK, confession time! One of my biggest weaknesses is always craving a yummy (and evil) muffin, bagel, or any carb while I enjoy my morning coffee on the deck. Being pregnant I feel as though this temptation is constantly knocking at my door. So instead of fighting this craving, I’m allowing myself to enjoy them on Friday mornings before I go sweat it out teaching spin and oranj method. I’ve also come up with some creative ways of making my favourites healthier and by doing so, more enjoyable mentally:) Here is my favourite Skinny Pumpkin, Banana muffin recipe!

Skinny Pumpkin Muffins

 

Calories: 146.5 • Fat: 2.7 g • Carb: 33.3 g • Fiber: 1.6 g • Protein: 2.7 g 

Ingredients:  

  • Coconut oil
  • 3/4 cup unbleached all purpose flour
  • 1/2 cup white whole wheat flour
    Or for a Gluten Free option, combine Almond and oat flour ! Delish  
  • 3/4 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp ground cloves*
  • 1/2 tsp ground nutmeg*
  • 3 very ripe medium bananas, mashed
  • 1/2 cup pureed pumpkin
  • 2 tbsp Coconut oil
  • 1/2 cup light brown sugar, unpacked or you can substitute this with applesauce!
  • 1 large egg white
  • 1 large egg
  • 1 tsp vanilla extract

Directions:

Preheat oven to 325°. Grease a 9×5 inch loaf pan with coconut oil.
In a medium bowl, combine flour, baking soda andpumpkin spice with a wire whisk. Set aside.

In a large bowl, creamcoconut oil and sugar with an electric mixer. Add egg whites, egg, bananas, pumpkin and vanilla, and beat at medium speed until thick. Scrape down sides of the bowl.
Add flour mixture and nuts (if using), then blend at low speed until combined. Do not over mix.

Pour batter into loaf pan or muffin tins and bake on the center rack for 60 minutes (for muffins about 25), or until a toothpick inserted in the center comes out clean.

Let the pan cool at least 20 minutes, bread should be room temperature before slicing.

* 1 tsp of pumpkin spice can be substituted for cloves and nutmeg.

                                                                   

      Mmm combine this view with coffee, the perfect muffin and you have the start of a fantastic day!
