Can Easter be Healthy?

Coconut Maple Bunnies

Ingredients

  • 1/2 c coconut oil
  • 1/4 c maple syrup
  • 1 tsp vanilla
  • 1 bag enjoy life chocolate chips (or a dark chocolate of your choice, chopped)

Steps

  • Combine the oil, syrup and vanilla in a bowl. (I like to smash the coconut with the back of the spoon to be sure it’s not lumpy.)
  • Spoon the mixture into the mold. (If you do not have a mold, you can use mini cupcake papers or just spoon teaspoon sized mounds onto a parchment paper lined cookie sheet.)
  • Freeze until firm (over an hour)
  • Using a double boiler, melt chocolate. If you don’t have a double boiler, use a large bowl placed over a pot of boiling water. This is a gentle way to heat chocolate without the risk of burning it.
  • Use two spoons to dunk the bunnies one at a time, make sure they are coated fully and then place them on a greased wire rack. The chocolate will firm up after a few minutes. I like to store these in my freezer.

*this should make about 12-15 bunnies

Chocolate Peanut Butter Bunnies:

Ingredients

  • 1/2 c peanut butter (or nut butter of your choice)
  • 1/2 c coconut sugar
  • 1 Tbsp maple suyrup
  • 1 tsp vanilla
  • pinch of salt
  • 1 bag enjoy life chocolate chips (or a dark chocolate of your choice, chopped)

Steps:

  • Mix all ingredients into a paste
  • Smoosh the mixture into the mold (If you do not have a mold, you can use mini cupcake papers or just spoon teaspoon sized mounds onto a parchment paper lined cookie sheet.)
