I’m always in search of snacks that both McCarthy and I can eat on the run, but I always seem to run out of interesting options. So this week I decided to set aside some time and make my own interesting, delicious and healthy options!
GLUTEN FREE PUMPKIN CHOCOLATE CHIP MUFFIN
2 CUPS GLUTEN FREE QUICK OATS
2 CUPS EGG WHITES
1 TSP BAKING SODA
1 TSP BAKING POWDER
2 TBSP COCONUT OIL
1 TSP CINNAMON
1 TSP NUTMEG
1 TSP CLOVES
1 CUP PUMPKIN
1 CUP DARK CHOCOLATE CHIPS
MIX ALL INGREDIENT’S IN MAGIC BULLET TILL SMOOTH BATTER IS CREATED. LET SIT FOR 5 MINUTES TO THICKEN UP. PREHEAT OVER TO 350-BAKE AT 350 FOR 10 MINUTES.
PLACE ON WIRE RACK TO COOL AND ENJOY!
