What Is Gluten?

Gluten is made up of 2 different proteins, Gliadin and Glutenin, that are most commonly found in wheat. It can also be found in other grains such as barley and rye, and other cross-breeds of these above-mentioned grains. These proteins are what cause the elasticity in dough and help bind bread together. Because if its binding elements, Gluten is readily used these days in many different forms of processed foods.

Gluten And Celiac Disease

The most Gluten intolerant disease that is running rampant these days is Celiac disease. Approximately 1 in every 141 people in the US today are struggling with celiac disease, and an estimated 1 in 133 are affected in Canada. This disease triggers a harmful response in the small intestine when Gluten is consumed, limiting the absorbing function of the small intestine. When healthy proteins, fats, vitamins and minerals cannot be absorbed by the small intestine, your entire body is compromised and can have a lot of difficulty staying healthy. There is currently no cure for Celiac disease, other than adopting a gluten free diet.

The Gluten Free Diet – Great Food Options

For anyone who has attempted to live on a gluten free diet, you’ll know that initially it is quite a challenge, namely because gluten seems to be in everything these days. Thankfully for you, we have decided to put together a list of foods that you CAN eat to help you successfully pull this off. Keep in mind if you are deciding to eliminate gluten altogether, either by choice or by necessity, that you are going to have to start reading every label when you are at the grocery store and plan ahead before going out to dinner or heading over to a friends for lunch. What’s great is that many food providers have gluten free options to choose from, and most restaurants (that care at all about people’s health) have GF (gluten free) options on their menu.
