Sadly due to our Internet being down for 4 days, there was a slight delay on sharing the exciting news of our ultrasound last week! We are very happy to announce we will be welcoming another handsome little boy into our family. Troy and I are so thrilled and guessing from McCarthy’s reaction he’s pretty excited about having someone to play trucks with. I will be honest and say, I totally thought it was a girl 100%! Just for the record, all those theories you hear that supposedly tell you you’re having a girl…they were totally false for us! We thought it would be fun to try and guess before hand so we went on heart rate, cravings, skin, ring test, and how I was carrying. All signs pointed to a girl and all signs were wrong. Let’s just say upon seeing the ultrasound we had a surprise and a good laugh. I think the moment I walked out of Sneak a Peak my mind started planning for the next nursery and all the cute little outfits again. All this planning and excitement can make a girl real hungry! This past week the black hole of tiredness has started to lift, so I have gotten back on the clean eating wagon and pre-planning all my meals. Knowing that I have healthy snacks and food ready for my week ahead honestly helps me sleep at night. For me there is nothing better then knowing not only am I set up for success but Troy and McCarthy are as well. When you have a child you suddenly realize that the perfect schedule of getting up at 6am, having your workout, a lovely shower and a peaceful breakfast no longer is in the cards. But rather then feeling defeated by your day never being the same and all schedule’s going out the door, I’ve been trying to control what I can and laugh about the rest! Breakfast is an area I can control and so can you! Here is a amazing, quick and healthy way to get your beautifully random day started! I’ve been prepping these for breakfast and we are loving them!
Skinny Overnight Oats in a Jar

- 1/4 cup quick oats
- 1/2 cup unsweetened almond milk
- 1/4 medium banana, sliced (freeze the rest for smoothies!)
- 1/2 tbsp chia seeds
- 1/2 cup blueberries
- 4-5 drops NuNaturals liquid vanilla stevia (or your favorite sweetener)
- pinch cinnamon
Place all the ingredient in a jar, shake, cover and refrigerate overnight. Add your favorite crunchy toppings such as nuts, granola, etc and enjoy the next day!
