Beans are a great way to add protein to your diet and keep your food budget under control. With the high-costs of organic/free-range meats, I have tried to introduce a couple of vegetarian meals into our weekly meal plan. These delicious falafel burgers will keep you from missing the meat, and are a very healthy option.
I’ve taken this traditional falafel recipe and re-worked it with a healthier approach .
1 pound (about 2 cups) dry chickpeas/garbanzo beans
1 small onion, roughly chopped
1/4 cup chopped fresh parsley
3-5 cloves garlic (I prefer roasted)
1 1/2 tbsp flour
1 3/4 tsp salt
2 tsp cumin
1 tsp ground coriander
1/4 tsp black pepper
1/4 tsp cayenne pepper
Pinch of ground cardamom
Coconut Oil or Avocado Oil
Heat your coconut oil up in pan.
After mixing all ingredients together in your blender, roll into little balls or patties.
Place in medium skillet and turn temp down to medium.Allow patties to brown on both sides and enjoy!
Servings: 30-34 falafel burgers (small patties)
