  • 2 tbsp coconut oil
  • 2 cups yams (peeled and cubed)
  • 1/2 onion (chopped)
  • 1 pepper (chopped)
  • 3 eggs
  • 3 egg whites
  • 1/2 tsp paprika
  • salt and pepper to taste


Pre-heat oven to 400 degrees

In a mixing bowl, toss yam cubes in coconut oil (melted) with a dash of salt

Bake yam cubes in oven until tender

In a medium size frying pan, saute onions and peppers with remaining coconut oil

In a small bowl, whisk eggs, paprika and pepper

Mix all ingredients together

Pour into paper-lined muffin tins

Bake at 350 degrees for 15-20 minutes or until cooked all the way through
