INGREDIENTS:

2 cans chickpeas

1 lemon

half purple onion

low fat feta cheese (optional)

salt and pepper to taste

organic spinach

 

DIRECTIONS:

Drain and rinse chickpeas

Place in skillet and cook till slightly soft.

Chop up purple onion and add to skillet

Squeeze lemon juice over top.

Top with feta cheese and serve over a bed of spinach with oil and vinegar!
