INGREDIENTS:

  • 1 1/4 cup quick oats
  • 3/4 tsp baking soda
  • 1/2 tsp ground cloves
  • 1 tsp cinnamon
  • 1/2 tsp ground nutmeg
  • 3-4 very ripe bananas (mashed)
  • 1/2 cup puree pumpkin
  • 2 tbsp coconut oil
  • 1 large egg white
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup dark chocolate chips

(You can also add 1/2 cup of unsweetened applesauce for additional sweetness. I usually leave this out as the chocolate chips add enough sweetness)

DIRECTIONS:

Pre-heat oven to 350 degrees

Place all ingredients in a blender or mixing bowl. Mix ingredients thoroughly.

Coat muffin pan with coconut oil spray.

Fill muffin tins 3/4 with mixture.

Bake 15-20 minutes depending on muffin tin size.

Let cool for 10 minutes in tins before removing and devouring.
