3 large peppers
1 cup quinoa
2 cans of refried beans (you can also soak dried beans overnight for a healthier option)
low fat feta (optional)
Cut peppers into halves, place in oven and cook for 10 minutes on 400 to soften.
Boil quinoa in medium pan. Once fully cooked it will “puff up”. Drain and rinse.
Mix beans, chopped onion and quinoa in bowl and place inside your open peppers.
Top with spinach and low fat feta cheese.
Place in oven for 10 min until cheese is melted and enjoy!
