INGREDIENTS:

1 cup of organic quinoa

1 yellow pepper

1 green pepper

1 cup white kidney beans

1 cucumber

1 cup purple cabbage

DIRECTIONS:

Cook quinoa in boiling water

Chop up the peppers, cucumber and purple cabbage

Mix chopped vegetables with white kidney beans and quinoa

Place in fridge to cool

Serve with a light balsamic vinaigrette or Italian dressing
