INGREDIENTS:

2 whole avocados

cherry tomatoes

scallions

low fat feta cheese (optional)

pure lemon juice

DIRECTIONS:

Cut avocado in half (lengthwise)

Remove seed

Cut up couple cherry tomatoes & scallions and place in the “bowl” where the seed used to be

Crumble feta over the top

Drizzle fresh lemon juice over the whole thing and enjoy!

Each avocado will make 2 small salads.
