  • 1 tbsp coconut oil
  • dash of sea salt
  • 1 lbs bison
  • 2 cloves minced garlic
  • 1 head of broccoli (cut into bite sized pieces)
  • 1 can Kidney Beans
  • fresh salsa
  • Roasted Red Pepper Hummus (see ingredients/directions below)

Roasted Red Pepper Hummus Ingredients

  • 2 cloves minced garlic
  • 1 can of garbanzo beans (drained)
  • 1/4 tsp dried basil
  • 1/2 cup roasted red peppers
  • 1/3 cup lemon juice
  • 1/3 cup tahini

Roasted Red Pepper Hummus Directions:

In a blender, mix the garlic, garbanzo beans, tahini, and lemon juice together. Blend until the texture is smooth. Add the roasted red peppers and basil and blend until the peppers are chopped up into tiny pieces. Season with salt and pepper to taste.


1. Broil broccoli in coconut oil and sea salt until broccoli is lightly browned around the edges.

2. While broiling the broccoli, sauté bison, garlic and onions in medium sauce pan. Mix in drained and rinsed white kidney beans.

3. Place broccoli on plate with your bean and bison mixture

4. Top with fresh salsa and roasted red pepper hummus

5. Enjoy!
