1 ripe pineapple, cut into half-inch slices
For the marinade:
2 tablespoons dark honey
1 teaspoon coconut oil
1 tablespoon fresh lemon juice
1 teaspoon ground cinnamon
Lightly brush the pineapple slices with the marinade.
Grill, broil, or sauté, turning once and basting with the remaining marinade.
Cook approximately 3-5 minutes on each side or until tender and golden.
Eat as is or serve with my favourite, coconut ice cream!
