Stomach Bugs and Pumpkin Chocolate Chip Cookies

 

 

 

 

Monday started with a list of about 10 items that needed to be done that day, all to be thrown out the window when McCarthy started complaining of stomach pains.  When relaxing on the couch to the movie CARS and eating his favourite snacks didn’t help, I knew the situation was calling for all hands on deck! Troy and I spent the night cuddling McCarthy and watching all his favourite movies as he fought the stomach bug like a champ. As a child, I will never forget that when we were sick and our Mom would do anything to make us feel better, which was tough to do in a house with 6 kids. Last night as I held McCarthy a little tighter and let him eat sorbet for dinner (I was thankful that he was at least keeping that down) I reminded myself that, although I am far from perfect, I know I am a good Mom and my little men know I will stop my world to give them the support they need. I love these little men with every cell in my body! Life can always wait, but hugs and kisses never!

I think a lot of times as mothers, fathers, sisters, aunts ect, we allow ourselves to think badly, speak poorly and daily tear ourselves down. It’s a proven fact that we will believe more of the words that come out of our mouth then the things others will speak about us (good or bad.) Our children and families need us to be strong to confidently approach challenges and celebrate through difficulties. Although I have a long road of wisdom ahead of me to learn, today I will celebrate through the lack of sleep, the dirty sheets and the bathrooms that need to scrubbed with bleach. I am blessed and my children know that I love them!

Seeing as McCarthy was on the mend, we decided to spend the day at home baking some delicious treats!

These cookies are gluten free and totally amazing!

Pumpkin chocolate chip cookies 


1 cup canned pumpkin puree

1 cup coconut sugar

1/2 cup coconut oil, melted

1 large egg

2 cups gluten free all purpose flour

2 teaspoons baking powder

2 teaspoons ground cinnamon

1 teaspoon baking soda

1 tablespoon vanilla extract

1 cup dark chocolate chips

 

Directions

 

Place all ingredients in Vitamix (or blender)

Blend on medium speed untill all items are mixed

Scoop onto cookie sheet lined with parchment paper

Bake at 350 degrees for 12 minutes

    These sound delicious Rach, but I can't eat coconut! 🙁 Do you know of any good alternatives?..I just know that regular substitutions.
