I can’t believe it has been almost a month since my last blog post! My apologies ! This past month has been filled with many activities, teething, dental work (me) and welcoming the heat of summer . With summer comes the farmers market, fresh vegetables, fruit and many experiments in the kitchen. I love food that burst with flavour and leaves you turning your nose up to that bag of M&M’s you have hidden under all your vegetables..
Lately I’ve been craving blackened salmon and decided to attempt my own version of this yummy dish. When I started looking up recipes I quickly realized that there are many unhealthy versions of this dish out there. I decided to experiment with some spices and it came out amazing and without all the sodium and butter that your traditional recipe will call for.
2 TBSP ground paprika
1 TBSP cayenne pepper
1 TBSP onion powder
1/2 tsp black pepper
1/4 tsp thyme
1/4 tsp oregano
1TBSP coconut butter
3 TBSP E.D Smith’s no sugar added Maple Syrup
Place salmon on a sheet of foil, spread Tbsp of coconut butter evenly over salmon. In a small bowl mix all your spices together and then evenly dust them over your fish. Drizzle your maple syrup over your fish, fold foil over the salmon and place in oven on 350 for 15 minutes.
Ok now that you have made the most amazing sweet and spicy fish, why not top it off with an incredible frozen treat…
3/4 cup full fat coconut milk
1/2 cup frozen mango
1/2 tbsp cinnamon (if you want it more minty flavour leave this out)
6 mint leaves
1 large handful of spinach
stevia to desired sweetness
2 cups of ice
Blend on high speed for 30 seconds and enjoy~~*
